WHere is a simplified interpretation of a beverage from a new drinks list. It's a party-sized prepared mix which is loaded full of tastes of a holiday season, making it excellent for hosting a festive gathering. Reserve the remaining syrup you can use for brunch beverages, puddings, or to mix another batch of this cocktail.

Serves 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Citrus Syrup: Put the listed items in a pot, bring to a gentle boil, agitating until the sugar dissolves. Next, turn off the stove and leave to cool down completely. Transfer into a clean bottle, seal and refrigerate it in the fridge, where it will keep for around a month.
To make Batch Mix: Mix all the spirits and syrup into a big jug, let it rest for an hour, then filter it preferably using a fine cloth, so it's fully clarified.
When ready to serve: Measure 85ml from the batch mix into your cocktail shaker containing ice, gently stirring lightly for about 60 seconds to chill. Filter into an frosted cocktail glass or equivalent, top with a few cranberries and complete it by giving it a quick spritz of mandarin oil over the drink.
